Instead of installing a step-down converter in every piece of gear, could I get get one installed in a power distributer, like the Juice Goose JG8, and have that supply power to the rest of the rack?
Yes, this will work. I don't know if you can get a rack unit that will do it, but you can certainly run the power distribution system on the transformer, and then everything else off the power distribution system.
