I haven't read all the replies here... got stuck at the matched PI tube. If it makes you feel better, do it... but for it to make a real difference, the PI caps and resistors would have to be matched perfectly, along with the output transformer windings. I call bullshit on the 'need a matched PI tube' thing, but it won't hurt either way. It's a few bucks more, so if it makes you feel good, do it... but I really don't think it makes a bit of difference.
