I like all the ones you stated like Iron Maiden, Queensryche, Metallica, Savatage and so on...
I'll add one I haven't seen yet.
Rudolph Schenker and Mattias Jabs- Scorpions
Most of the songs are pretty simple, but I think they worked really good with the way they would play in between each other riffs or something and their music is fun to listen to.
