So many to choose from, but off the top of my head:

      Vito Bratta: Wait
      Richie Sambora: Dry Country
      Randy Rhoads: I don't know
Adrian Smith: Evil that Men Do, Stranger in a Strange Land, Wasted Years (and lots more)
Paul Gilbert: How can you do what you do?
Kirk Hammett: Shortest Straw, Struggle Within
Popular is not the same as good
Rare is not the same as valuable
Worth is what someone will pay, not what you want to get

Too many to choose from but Comfortably Numb (Pulse version) is on the top of the list and will always remain there. Unrivaled by anything.
You took too much, man. Too much. Too much.

wow some good ones listed here.
At the top of my all time list has got to be
#1. Kid Charlemagne, not a wasted note in that solo. Lots of Steely Dan tunes had great solos in them.
#2. Stairway to heaven. Not technically difficult but you couldn't write a better solo for that song than Jimmy did. It sounds so perfect when he kicks in.
#3. VH second solo in "I'm the One", he just comes in cranking and doesn't stop. My all time fav VH tune.
#4. VH Outta Love. Tasty blues licks played ala EVH style. If you don't know how to grab the shit out of a note you can't even come close to playing that one.
#4. Pink Floyd- Comfortably Numb , Hell everything by David Gilmour, has he ever played a bad solo in a song?
#5. Steve Vai-Windows to the Soul, the whole song. The first time I ever heard that song it moved me so much I almost started tearing up.
#6. Jimi Hendrix, the outro solo to "All Along the Watchtower". simple but every note is perfect. One double stop he does in there makes it stand out as a classic.
#7 Robin Trower - Bridge of sighs, the whole album, great bluessy playing at it's best.
#8. Jeff Beck -anything off of Blow by blow and Wired. to me he peaked with those 2 albums, but man what a way to peak. Incredible playing on every song on both albums.
#9. Joe Satriani. Anything off of "Surfing with the Alien" Joe made everyone take it up a notch with this CD.
                    # 10 Jeff Loomis -Engines of Hate, the River Dragon, This Godless Endeavor,Final Product. those 4 are my favs. he's a slippery fucker, flys thru dimished arps at warp speed , seemingly at will. Smooth, smooth player, GREAT rhythm player, guys a riff machine, knows how to make great use of a 7 string.
#11 Greg Howe "Howe Bout it" and "Botton Line off of the Parallax CD.
Stringed Sanity, and Business conduct off of "Uncertain Terms" and Jump Start off of Introspection. Greg has a unique style that is distinctly "Greg"
one of the tastiest mother fuckers out there, the guy can play over anything you throw at him and still make it sound great. Learning Greg completely changed the way I play.
#12 Vinnie Moore- behind Loomis and Howe my next favorite player. Anything off of the Maze Cd or Meldown works for me. Another very tasteful player that can flat out fly when he wants to but never over does it. Another very smooth arppegio player, that does it with taste.

jeez I could go on all night here :ROTF:

Dimebag - The Sleep, Floods, Rise, Planet Caravan
Friedman - Poison was the Cure, Killing Road, Symphony of Destruction
Skolnick - Face in the Sky, New Order, First Strike is Deadly
Rhoads - Over the Mountain, Children of the Grave on the Tribute album,

Satriani - Always With Me, Always With You
Loomis - Pretty much any solo on Godless
James Murphy - Infected, Trail of Tears, Contagion

I could go on forever but I'm hungry and tired, these are the first that come to mind

Buckethead - Jump Man (Monsters & Robots)

Chris Duarte - Big-Legged Woman (Texas Sugar / Strat Magik) -- in the SRV vein

Randy Rhoades - "Over the Mountain" Totally smokes!!

The Cult - "Love Removal Machine"

The best solo ever recorded, IMHO is Yngwie's second solo in 'Dreaming'.

Other favourites I've not seen mentioned yet -
Vernon Reid 'Cult Of Personality' (Mainly 'cos it pisses people off)
Jeff Beck on JBJ's 'Blaze Of Glory'
Gerry Rafferty's 'Baker Street' (I don't know who the soloist is, but he freakin' smokes)
