it depends. There's gunk, and then there is gunk.
I don't mind discolouration, or a nicely worn maple fretboard, but I'm not too keen on playing in another man's gunk. A couple of my pawnshop finds have demanded some serious gunk removal before I could fully enjoy them.
But by and large, my own gunk don't worry me none. As long as the strings are fairly fresh, it's all good.
