My friend has one, it's a great guitar, plays great, sounds great, and looks great. I'm just not too big on Signature guitars, even though JL is one of my favorite players. No doubt if I were to snag a 7, that would probably be it, unless Jackson had something that was in the same price range and was equally as good. Schecter is really running the 7 string market right now, they offer good quality at a pretty good price... Tough to beat unless you really want to.
What I like about the Loomis is that it's not obvious that it's his signature. It's not like those terrible Avenged Sevenfold models. It just looks like a different model.
I would like the regular pointy to stay on Jackson 7-strings. I saw the COW and it looked fine. Maybe just make the logo a little bigger to compensate. An SLS headstock would look good too though.

My cs kv 7 is by far my favorite guitar... EVER!!!
Still have my near-mint DR7T that gets played every once in a while...good fun when I'm looking for a change of pace. Will probably replace the Duncan Designed's with EMG 707's one of these days though...
Please make a 7 string soloist with 2 EMG 707 and a floyd rose. Even if I have a SLS3, I prefer the normal pointy in line head stock. For the body, an archtop soloist would look great (see the Chris Broderick custom Ibanez). I think that passive pickup are too muddy for 7 strings (from my experience on an RG7 620 and a Universe). Go wth EMGs please!!!!

As mentioned before, a double humbucker option is a must for increasing potential sales as well as offering both Floyd and string-through options. Keeping the traditional alder body should work fine for preventing mush (IMHO).
Body styles I would go with the DK and SL first, there's just something that looks a little unbalanced in a 7 string RR I can't put my finger on.
Pickups are going to be interesting: EMG 707s would be the obvious choice but would make pickup replacement more difficult. SD Blackouts would allow for passive retrofitting but I believe there is a cost factor to consider (more expensive than EMGs?).

Well, Guyver did the normal size headstock with his 7 string and it turned out fine right? Granted, his is a reverse headstock but I don't see why it wouldn't work on a non-reversed :think:. Has anybody custom ordered a standard normal size headstock 7 string? I think Jackson should do it that way if it works.
