Godin LG series are cool. I had an LGXT which also has the 13-pin output for Roland gear like the VG-88 and MIDI stuff like the GR-33. I still have a Godin Multiac which is a nylon string with Piezos and 13-pin output. Godin makes great stuff.
Brian Moore also makes some Piezo equipped stuff - careful with these though - I've not been impressed with the low-end guitars from Brian Moore though - the high-end stuff is nice but very expensive.

You could check out a EB/MM Petrucci model. Those things are pretty sweet. Also, check into a Hamer Duotone. I don't believe it has a piezo, but being a hybrid electric/acoustic, it would give you some wickid acoustic tones.
Wendler Electrocoustics are outstanding, as well, but they don't use your traditional piezo system. Dave's site is down right now, but it should be back up in a few days. www.electrocoustic.com
