Another +1 for Seagull. I love my 12-string, and it is an amazing deal on an all solid-wood guitar. The backs and sides are cherry, which gives an unique look and sound. There is a lot of competition in the $500 range, so you really can't go wrong with anything by Seagull, Yamaha, Takamine, Ibanez, Carvin, Martin, Alvarez, or Taylor. I could spend all day tripping over great sounding acoustics for $500.

Guild's are wonderful guitars. I had a Guild 12-string for many years. I sold it and bought a Taylor because the neck on the Guild got to being very uncomfortable for me over time. I don't think you can get a nice Guild for under $500 though.
