I saw a PRS Chevron on ebay a few weeks ago and it got me thinking why so few guitar companies do this. I personally like the look and was wondering what other people think of them.

Symmetrical flame tops?

or possibly more that a lot of people dont understand how flame looks when it IS properly bookmatched, because they dont understand that the "look" of the flame lines has to do with grain direction versus surface cut, and that looking from certain angles (EG: perpendicular) makes it look like it isnt "bookmatched" when it actually is....

Yep...it's all in the 'slicing' of the cut that makes it look like it does. Most companies will choose a really pronounced dark flame pattern for bookmatching a top into a chevron pattern.
The flame has to look right...tight, pronounced, etc...
Not necissarily more expensive wood, just more involved in making it.
