My upcoming MCS will feature a quilted maple top over a cocobolo body so yeah, he'll do it. It's a custom bolt-on though, not a Templar.

I'd go with the Moser. You won't get the attention-to-detail on anything else (unless it's in the really HIGH dollars, and even then some manufacturers struggle). While I haven't played a Templar, I've heard the heal is very favourable amongst players who do. My experience comes from picking up Moser 10 #2. I love it so much (it put all my other guitars to shame) that I had to get another. Neal's bloody great when it comes to Customer Service too.

i do own a Moser Import,and i have to say its a shred monster
