The guitar I want isn't even that special, basically just an RG with a trans green finish over some sort of figured top, with natural body binding, string through, 2 humbuckers, reverse headstock, bound ebony board with either sharkfins or offset block inlays ala ESP... anyone know anywhere that I could get something like that done? Preferrably with either an Ibanez, ESP or Jackson headstock shape...

Check out Don Grosh. I have two of his guitars and he's a phenomonal builder. His fret work is out of this world. I don't know what he'd do about matching someone else's headstock shape, though. But you'll never know unless you ask.
Here are my two Groshes (sorry for the bad lighting):
For the red guitar, Don matched the metallic finish on a travel mug that my wife really liked. I actually sent him the mug so that he could do that. It came out great and was a dead-on match.Takeoffs are optional but landings are mandatory.
