What material is the nut made from on the model series guitars? Were they graphite or just black plastic?

Black plastic.

Did anyone use graphite nuts in the mid 80's? I seem to think they were a mid 90's "nobody want to bee seen with a Floyd-equipped guitar" type innovation.

True, but remember that the JT-6 system used not only a locking nut, but a standard nut as well.
