hmmm a 7 string XTRR would be interesting. It might look weird with a bigger neck on the smallish body, but would be very unique.
Be very clear with your work order and details. You don't want any surprises.
I've done my orders through Matt's Music and they have been smooth enough.
As far as the Lundgren you would probably have to buy it and send it to Jackson or the dealer for them to install it.
