Ok, I have a PC-3 with a quilted veneer top, and a very dark paintjob which makes the quilt hard to see unless it's in strong light. What's a good way to make the finish lighter; sanding? Chemicals? Leave it in the sun for a week or two?

The sun is to age / yellow the clear laquer topcoat. It will also fade / lighten certain laquers, but they need to be a dye, not a pigment.
Be careful leaving the guitar in the sun. If the guitar overheats, it could warp stuff.
I'd say with new finishes, you'd probably need to strip and re-paint. They come with chemicals to prevent fading and yellowing.
