I am going to order a alder bodied Charvel. I already have a Bullseye with a maple board so I am thinking maybe Rosewood or Ebony. Which would sound better with the alder body?

I would do the Rosewood over Ebony. To me Ebony is a real dead sounding wood. I prefer a maple neck with alder. I never liked any guitars with Ebony. If you want to try a killer combo try a Basswood with maple top body and a all maple top.

Ebony adds to the sustain of the body and a smooth feel.Peace, Love and Happieness and all that stuff...

I'd go with rosewood if you're wanting tonal variety. Ebony and maple are equally dense, thus have the same bright tone.I want to depart this world the same way I arrived; screaming and covered in someone else's blood
