So I'm looking at the flat top body from warmoth, not too bad of a price, I guess, but I'm thinking of getting it in maple, but what benifits am I actually going to get from alder to maple, etc? I know the tone will be different, but will it be noticable?
I believe alder versus maple body would cause noticeable difference in tone, yes. Hard to say exactly what, though, since two pieces of the same species not necessarily will sound alike. But "different" isn´t the same thing as "better" either.
