I just got one and there is a button labeled VDC (vehicle Dynamic Control) and I really don't know what the purpose of this is. The owner's manual is a bit vague... or I'm just stupid, lol.....

Anyone own a Nissan Pathfinder?

It's not specific to the Pathfinder. It varies from manufacturer to manufacturer, but it's a set of computer controls which predict when you are doing something dumb with the steering/brake/throttle inputs, and "fixes" it for you.
For example you're going around a corner a little fast and decide to lift off the throttle just after you turn the wheel... The car's ass-end wants to come around, but the VDC will make the throttle lift "smoother" and possible engage one or more brakes at one or more corners of the car, to keep it pointed where it "thinks" you want to go.
