Cirque Du Soleil shows - Love (the Beatles one) and Kà are a must see IMHO. If you prefer usual Cirque shows, see Mystère or O. Zumanity is kinda cool if you like the "cabaret" stuff. And the latest one, Viva Elvis, seems promising but I can't comment as I only saw videos of it. As the that show is brand new, I know they are still working on it. Those new productions are a work in progress.

The desert - Anoter must see. I think you already plan a trip to the Grand Canyon. Rent a convertible if the weather let you do so.

Food - As others as said, Vegas is nice place for eating. Follow the suggestions above and check the links provided.

Yep we're seeing the Beatles one. We'll see what deals we can get on the other shows once we're there.

I don't think a convertible works for the Grand Canyon in March. Average high temps are in the 40s. Even in Vegas the average high is still in the low 60s.

edit: just checked the weather. The Grand Canyon area is supposed to get 8 inches of snow today, and Vegas highs are around 65.

Funny, I'm in Manchester UK right now and I hate the weather right now... It's around 30 F (-2 C) with like 200% of humidity... Gimme a -22 F (-30 C) in my province anytime.

That humidity here is killing me. I can feel it in my bones!
