Iron Maiden - guitar solo during the 1986 Sheffield gig. Otherwise, I'd say the Genghis Khan instrumental from their Killers album.

After watching Pink Floyd Live in Pompeii last night I can't decide between One of These Days or Careful With That Axe, Eugene. But definitely one of them.

Orion and To Live is To Die (9 minute song w/one verse--still qualifies) are other great ones.

And let's not forget about the following ones:
Dark Tranquillity - The Mind's Eye
At the Gates - The Flames of the End
Dave Brubek Quartet - Take Five
All That Remains - Regret Not
                      Joe Satriani - Why
Shadows Fall - Lead Me Home
Metallica - The Call of Ktulu
                      Genesis - Hairless Heart
                      Tristania - Simbelyne
                      Opeth - Ending Credits
                      Randy Rhoads(sp?) - Dee
                      TSO/Savatage - Christmas Eve Sarajevo
                      Soilwork - Centro De Predomino
In Flames - The Jester's Race
                      Steve Hackett - Sierra Quemada

Jimi's "Third Stone From The Sun" is one sexy tune, Bertolucci used it brilliantly in The Dreamers.
