If you're looking for stuff with vocals then:
Racer X
Apocrypha
Cacophony
Dokken & Ratt (a little on the cheesey side band-wise but great guitar playing)

For instrumental stuff, basically anything from the Shrapnel Records catalog (MacAlpine, V. Moore, Becker, etc.)
