      i'll have a 3 inch cut rib eye or filet from the butcher only, no supermarket beef for me when i am making money. i like it bloody red. in fact, just wave it by the fire and it's ready for me. i've had great tar tar on occaision as well.
      red meat i could eat everyday for all 3 meals.
      Not helping the situation since 1965!

        Favorite cut of meat is Ribeye...around 26oz or so (I really like huge steaks). Cooked medium-rare with a heavy sear/char on the outside. I then use worchestshire(sp?) sauce to add a little spice....drool

          Because otherwise you might as well just eat a hamburger? Cooking a steak well done is a fucking crime, it absolutely, completely ruins the taste of the meat and defeats the entire purpose of eating a good cut of steak. Why not just boil the thing until it is grey?

          I'm with you Mike, big no no, seriously 1 minute on each side and it's good to go. Growing up in West Texas on the border I was always in Mexico and they are the same over there, everything is extra well done. They will freak if you order meat less than that, but down there you are just as likely eating gato taco than beef, so I can understand their fear.
          Come and get one in the yarbles, if you have any yarbles, you yunick jelly thou!

                    I think Rib Eyes are very tender when done right. They're great when left to marinade a little IMO. New York Strips, Porterhouse are tasty BBQ'd rare, med rare or med w/o marinade and a little seasoning. I like everything grilled rare or med rare myself, including Tuna, Albacore.
                    T-bones, Top Sirloins, Ribeyes are the main grill staples when on a budget..but if I want to splurge...Beef tenderloin, Filet Mignon grilled or a nice rare prime rib sure hits the spot.

                      Porterhouse, in Shula's in Chicago. Caesar salad, 36 oz Porterhouse, baked potato, and a few Goose Island Honker's Ales.

                        Rib-Eye, New York, or T-Bone. Either of these work. You season them with salt and crushed pepper. Season ever so lightly with paprika and cayenne (remember, just lightly). SLOW grill them to medium or medium-well if you don't like medium. About 2 minutes before they are done, cover the stake (er, I mean steak) in pepper jack cheese. MMMM [img]/images/graemlins/drool2.gif[/img]

                        Also, one way is to just season with salt. Slow grill and about 2 minutes before they are done cover with New Mexico green chile and pepper jack cheese. [img]/images/graemlins/drool2.gif[/img] If you're not from New Mexico, you just won't understand...

                        Also a medium Prime Rib with horse radish (creamy or chunky) on the side is delicious as well [img]/images/graemlins/drool2.gif[/img]
