I like spicy food too just as long as it is adding flavor to the food and not just turning it into a test of your manhood to see how long you can let your toungue burn before you say UNCLE.

Mark sent me some a while back and it didn't last long at all.I make smaller batches from time to time mostly carrot and garlic based with some mango and peach.I grow my own habaneros.Tomato based sauce just dosn't let the flavor of the habanero come out for some reason.Its all about the flavor not the heat.You get used to the heat, the habanero has a unique flavor.Really? well screw Mark Twain.

If it's less but tastes better,I could probably handle it. I ate a heaping tablespoon of Dave's the first time I saw it,and it was a disaster. I even toyed with the idea of going to the ER. I make a sauce here at the house that takes 2 bottles of regular Tapatio,my fave every day sauce,and I mix it with crushed red pepper and a plastic spoon worth of this Mexican El Yuachuca habanero sauce. It comes out way hotter than anyone around here will even try,but I eat enough of it to break a good sweat once or twice a week. It honestly helps me keep my sinuses cleared up. Dave's Insanity Sauce is a concentrate and very high in capsaicin. You can fuck up a pot of chili real quick with that stuff.
Although I've never tried Marks sauce, I would bet it's hot as all hell, but I kind of feel it wouldn't be hotter than Daves. If it is I hope he has release forms and warning labels for it!Whataya Mean I Don't Support The System? I Go To Court When I Have To!

There are a lot of sauces out there that are just plain painful. You have to use them in extremely small amounts, and just to add a little heat, not flavor. Daves makes some good ones, CaJohns King Cobra and Z sauce are excellent, but these are extremely hot and contain pure Capsaicin extract.
I'm not sure exactly how to describe the heat of my sauces, but they're nothing like the above mentioned. If you were to eat a tablespoon of mine you'd sweat, and your sinuses would clear up....but you wouldn't be in "pain". It's hot enough to be hot, but it'll keep you wanting more too. Plus it tastes good! Try the recipe cut into 1/4 for a smaller batch, you'll love it!My goal in life is to be the kind of asshole my wife thinks I am.

Mark, a bottle of your sauce ended up with my dad in east Texas. He said he wasn't eating much of it because (!) it was too hot (something I've never heard him say, ever) so he let some of his adult English as a second language students use some.
He reports that a week later, they returned the empty bottle, and asked if he had any more.

Canning is not hard just time consuming.It takes 90 days to germinate habanero seeds so start early indoors get them started good before planting outside.I use a very large planter for habaneros just to keep the little ground vermin away from them.Rabbits love them.Really? well screw Mark Twain.
